Olan Recipe: Olan is a delightful curry crafted from white pumpkin (also known as ash gourd or kumbalanga), cowpeas (red lobia or chawli), and coconut milk. This gluten-free and vegan dish is a comforting treat, especially when enjoyed alongside steamed rice or Kerala red rice.

Traditionally served during the Onam Sadhya, Olan embodies simplicity and homeliness. It boasts a gentle flavor profile highlighted by coconut milk, curry leaves, and cowpeas. The addition of green chilies and curry leaves enhances its aromatic appeal. For an authentic touch, coconut oil is recommended for cooking.

As a coconut milk-based curry, Olan harmonizes perfectly with steamed rice, particularly Kerala red rice (matta rice).

In my culinary journey, I’ve shared various Kerala recipes, with Olan being one of them. Other notable dishes include Vegetable Stew, Kootu Curry, and Kalan. My adaptation of Olan draws inspiration from the quintessential Kerala cookbook.

While white pumpkin is the traditional choice for Olan, yellow pumpkin (kaddu) can be a suitable alternative. Similarly, black-eyed peas can replace red cowpeas without compromising the dish’s integrity.

Ingredients: Olan Recipe

For pressure cooking cowpeas:

  • 1/3 cup cowpeas (red lobia)
  • 1.5 cups water for pressure cooking
  • 1/4 teaspoon salt for pressure cooking

For making olan:

  • 300 grams ash gourd or 2 cups chopped ash gourd (white pumpkin or kumbalanga)
  • 7 to 8 curry leaves
  • 3 to 4 green chillies, slit
  • Salt to taste
  • 3/4 to 1 cup water for cooking ash gourd
  • 1 cup thick coconut milk
  • 12 to 14 curry leaves
  • 2 to 3 teaspoons coconut oil

Instructions: Olan Recipe

Preparation:

  • Rinse and soak 1/3 cup of red cowpeas (red lobia) overnight.
  • The next day, drain all the water and rinse the cowpeas again. Remove any excess water.
  • Transfer the soaked cowpeas to a 2-liter pressure cooker. Add 1/4 teaspoon of salt.
  • Pour in 1.5 cups of water and pressure cook over medium flame for 3 to 4 whistles or 8 to 9 minutes until the cowpeas are tender and well-cooked.
  • Once the pressure settles, open the lid and check if the cowpeas are cooked. Set aside.

Cooking the Ash Gourd:

  • Rinse and peel 300 grams of ash gourd. Cut it into medium cubes, discarding the seeds and pith. You’ll need two cups of ash gourd.
  • In a pan, place the chopped ash gourd along with 7 to 8 curry leaves and 3 to 4 slit green chilies. Season with salt to taste.
  • Pour in 3/4 to 1 cup of water. Alternatively, you can use thin coconut milk.
  • Cover the pan and simmer over low to medium flame until the ash gourd is tender. 
  • The ash gourd should be cooked until tender, with some water remaining in the pan, but not excessive.

Making Olan:

  • Add the cooked cowpeas (without the stock) to the pan with the ash gourd.
  • Pour in 1 cup of thick coconut milk and mix well.
  • Gently heat the olan curry over low flame for 4 to 5 minutes without boiling.
  • Turn off the flame and add 12 to 14 curry leaves and 2 to 3 teaspoons of coconut oil. Mix well.
  • Cover and let the flavors infuse for 6 to 8 minutes.
  • Serve olan with steamed rice.

Notes:

  • Black-eyed peas can be used instead of cowpeas, but avoid overcooking.
  • Yellow pumpkin can substitute white pumpkin.
  • A combination of yellow and white pumpkin can also be used.
  • Optionally, ginger can be added for additional flavor.
