Ingredients (240 ml cup used)
- 4 tbsp. almonds almonds (blanched preferred)
- 2 tbsp. coconut or roasted peanuts
- 2 to 3 green chilies
- ¼ tsp cumin / jeera
- 1 tsp oil

- Small piece of ginger or 1 garlic
- ¼ tsp of tamarind paste or few drops of lemon juice
- Fistful of coriander leaves or mint leaves
seasoning
- pinch of cumin
- Pinch of mustard
- 1 broken red chili
- 1 sprig of curry leaves
- pinch of hing
How to make the recipe

Dry roast peanuts if using. Set aside to cool.

Fry almonds and green chilies in 1 tsp oil till you get an aroma on a low flame. Takes around 5 mins. Set the chili aside.

Pour in cold water in the hot utensil and set this aside for around 30 mins. Then peel off the skin. Soaking also enhances taste.

Add cumin, green chili, salt and almonds to a chutney jar and powder them.

Add almonds, enough water and grind to a smooth chutney. If using coconut or peanuts add it now.

Season badam chutney with seasoning ingredients.
Variations

to make almond chutney, I use ice cold water to bring down the temp of hot almonds so that I can grind faster and it also helps in peeling them faster.
