Semolina Porridge

Dessert: Ravai Thirukkamudu

Do you know what is semolina? Semolina is coarsly ground wheat. It is called rava or sooji in many Indian languages. You can see a picture of Semonlina on Wikipedia.

To make semolina porridge you need to roast it in clarified butter (ghee). On slow fire semolina should be roasted till it turns slightly brown and emits a nice roasted smell. Then you add some water to cook it. After it is cooked well, add milk and sugar and keep stirring.

Now that the semolina porridge is ready, all we need to do is to garnish with cashew, almond, cardamom and saffron.

Remember if you do not have cashew or almond or any of the garnishing ingredient you can still make the dessert without them.
