Sago Porridge
Dessert: Sabbarisi Pāyasam
What is sago? Wikipedia says "Sago looks like tapioca and both are pearly grains of starch, but tapioca is made from the root of the
cassava plant. They are similar but are not identical when used in recipes".
"Sago is a powdery starch made from the processed pith found inside the trunks of the Sago Palm Metroxylon sagu".
Sago is called sabbarisi in Tamil and Sabudana in Hindi.
For this porridge you need sago, milk, sugar and clarified butter.
Roast sago in clarified butter. Add half a glass of water and cook it for 5 minutes. After sago is cooked add milk and
sugar and boil for three more minutes. Add powedered cardamom and roasted cashew nut for garnishing. Leave it aside for 5 minutes. You
can serve sago porridge hot or cold.
